Pumpkin Pancakes

These American-style pancakes make a great breakfast for
Halloween, or perhaps a snack before trick or treating.
Ingredients: 2 cups
all-purpose flour (plain flour)
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 teaspoon pumpkin pie spice (or substitute cinnamon or nutmeg)
2 eggs
1 3/4 cups milk
3 tablespoons melted butter plus 1 tablespoon for frying
1/2 cup canned pumpkin
Butter to decorate and serve
Strawberry syrup to serve
Instructions:
Blend the flour, baking powder, salt, sugar and spice together in a large
bowl.
In another large bowl or jug, beat the eggs and milk. Add 3
tablespoons of the melted butter and the canned pumpkin, beating well. .
Gradually add the dry ingredients to the pumpkin mixture,
stirring lightly - just until the dry ingredients are moistened. It doesn't
matter that the batter will be slightly lumpy.
Heat a pancake griddle or large frying pan, testing the
temperature by sprinkling it with a few drops of water. If they bubble, your
temperature is just right. When ready, drop in a tablespoon of butter, then pour
in 1/2 cup of batter. Cook the pancake until bubbles appear on top. Flip and
continue cooking until golden brown.
To serve place 2-3 pancakes on top of each other. Cut three 3
slices of butter into triangular shapes and use to decorate the top pancake: use
2 triangles at the top of the pancake for the eyes, and 1 in the middle for the
nose. Make the pumpkin mouth with strawberry syrup. |
