Oaty Shortbread

These shortbreads are not too sweet, crumbly and very more-ish! You get a
really good amount with the recipe below, and they store well in a biscuit tin
(and freeze well too). They are also incredibly quick and easy to make with a
food processor.
Ingredients:
10 oz (275) oats
4 oz (100g) plain flour
5 oz (150g) caster sugar
1/2 teaspoon bicarbonate of soda
Good pinch of salt
8 oz (225g) butter
Recipe:
Preheat the oven to 180 C (350 F, Gas Mark 4)
Put the oats in a food processor and give them a quick blitz to make them
quite fine. Add all the ingredients and pulse together until a dough is formed.
Turn out onto a floured surface and roll out until about 1/4 inch thick. If
you like, the kids can use a cookie cutter to cut out some shapes, but we
preferred to use a knife for speed and cut out squares! Place onto baking trays
(you don't need to grease or line them) and bake for 15-20 minutes until golden.
Remove to a wire rack to cool.

Pile a few of these shortbreads into a pretty tin, tie with a ribbon, and you
have a super gift!
