Jumbles

Jumbles recipe

These slightly gingery biscuits are a delicious treat which kids will enjoy baking - and eating!

Ingredients:

Biscuits:
60g (2 1/4 oz) butter
160ml (5 1/4 fl oz, 2/3 cup) golden syrup
260g (9 1/4 oz, 2 cups) plain (allpurpose) flour
1 tsp bicarbonate of soda (baking soda)
1 1/2 tsp ground ginger
1 tsp mixed spice

Icing:
A small amount of cold water
240g (9oz, 2 cups) icing (confectioners') sugar
2 tsp lemon juice
food colouring
sprinkles

Preheat oven to 180C (350F, Gas Mark 4) and line two baking trays with baking paper. Put butter and golden syrup into a saucepan and stir over low heat until just melted, then turn up the heat and quickly bring to the boil, then immediately remove from the heat. Leave to cool for at least 10 minutes.

Put the flour, bicarbonate of soda and spices in a mixing bowl together (you can sift them if you like, but we didn't), then stir in the butter and syrup mixture.

Knead on a lightly floured surface until smooth. Don't overdo this stage - knead as little as you can. Divide into 3 or 4 and roll into logs. The dough will be quite soft. Slice into rounds (actually, ours came out oval, but they looked good like that!)

Bake for 10 minutes, until lightly golden.

Cool for a moment on the tray and then move to wire racks to cool completely before icing.

To make the icing, sift the icing sugar into a bowl. Add the lemon juice and any food colouring, then sprinkle in a little cold water until you can mix the icing into a gloopy consistency which will cover the jumbles without running over the edges. Be careful not to add too much water or food colouring!

Once iced, you can add further embellishments - spinkles, hundreds and thousands, food glitter - if you wish.
